Efter et praktikophold i den 2-stjernede restaurant KOKS p\u00e5 F\u00e6r\u00f8erne blev han hurtigt Chef de Partie. Efter et kort stop p\u00e5 Oslos 3-stjernede restaurant Maaemo vendte Vadim tilbage til KOKS som Sous Chef. Fordi F\u00e6r\u00f8erne var for ensomme for ham i l\u00e6ngden, tog han hjem igen og derefter til Mexico. Der m\u00f8dte han folket i Noma tilf\u00e6ldigt &#8211; en 2-stjernet restaurant i K\u00f8benhavn og if\u00f8lge Vadim &#8220;den klart bedste og mest interessante restaurant i verden&#8221; &#8211; og kunne tilbringe et par m\u00e5neder i deres pop-up restaurant i Mexico Tulum arbejde. Vores retter er altid st\u00e6rkt krydrede, jeg arbejder meget med ristede aromaer. Derfra gik jeg meget ud i naturen, syltede ting, g\u00e6rede og anvendte den viden, jeg havde f\u00e5et de seneste \u00e5r, p\u00e5 produkter i mit omr\u00e5de. I l\u00f8bet af denne tid blev bungalowen langsomt til et produktionsk\u00f8kken.<\/p>\n<p> Jeg finder det bare logisk at bruge tingene i umiddelbar n\u00e6rhed. N\u00e5r jeg er i Berlin, er der produkter fra Berlin og Brandenburg. Men n\u00e5r jeg er et andet sted, kommer tingene derfra. N\u00e5r jeg rejser, vil jeg gerne spise regionalt. At alt altid er tilg\u00e6ngeligt betyder, at samfundet er m\u00e6ttet. Jeg vil gerne formidle til mine g\u00e6ster, hvad vores region handler om. Derudover er det efter min mening den eneste m\u00e5de at f\u00e5 rigtig t\u00e6t og god kontakt med de mennesker, der laver vores produkter. B\u00e6redygtig madlavning betyder ogs\u00e5 at smide s\u00e5 lidt mad ud som muligt. For eksempel har vi en skraldespand, der g\u00e5r tilbage til landm\u00e6ndene for at fodre dyrene med resterne.
